So here they are, the simple dark chocolate brown rice crispy treats that I used for the bottom layer of the peanut butter and dark chocolate squares I made a week ago or so. I figured I just make the bottom crispy part by itself and call it a day....well actually more like I wanted to try it by itself anyhow.
They were really good but in my opinion I rather have the extra coconut and peanut butter layer in between with the extra dark chocolate chips on top, just saying :-)
I actually though these, by themselves, were a little bit on the sweet side so I made them a second time and decrease the sugar from 1/4 cup to 3 tablespoons, a little bit better!!
Crispy treats are a very popular thing with kids. I don't have to say it twice, when I am offering crispy treats to the kids at my house, they both run at once :-)

yields 14-18 pieces
3 tablespoons unrefined sugar
1/2 cup honey
1/2 cup peanut butter
2 1/4 cups brown rice cereal
1/4 cup flax seed meal
1/2 cup oats
1 tablespoon dark cocoa powder
In a sauce pan, at low heat, combine sugar, honey and peanut butter. Heat for about 1-2 minutes stirring to dissolve sugar. Remove from heat and add cereal, oats, dark cocoa powder and flax seed meal. Press into a square baking pan lined with foil like in the picture.
Let cool to set. I normally put it in the fridge for 20-30 minutes. Lift out of the pan, remove foil and cut into small bars or squares. Store in the refrigerator.
