Freeze-Dried Fruit Chocolate Bark

As someone with celiac disease, I know firsthand the challenges holiday parties pose. We want to participate in all the festivities and sample all the festive treats, but alas, we cannot unless they're gluten-free.



On top of it all, many of the holiday party invites require us to bring a potluck treat. 

Whenever I'm asked to bring something to a holiday party, instead of wasting my energy trying to whip up a gluten-free cookie or cake to compete with the massive amounts of cookies and cakes already on the table, instead I make something that is naturally gluten-free and something I know everyone will love... chocolate bark.

Chocolate bark is surprisingly easy to make. I simply melt plain old chocolate chips and top the melted chocolate with anything that sounds good to me - crunchy rice cereal, crushed candy canes, marshmallows, dried fruit and more. 



This year I decided to put a fun spin on chocolate bark by topping it with Honeyville's Freeze Dried Fruit. I have a serious freeze-dried fruit addiction - and these huge canisters of freeze-dried goodies from Honeyville always satisfy my cravings for something sweet and something crunchy.  

Armed with chocolate chips, freeze-dried strawberries, and freeze-dried blueberries, I quickly whipped up a delicious holiday treat that I know everyone will love. 

This bark is sweet and crunchy and will satisfy everyone's hankering for a chocolatey treat.

Freeze-Dried Fruit Chocolate Bark Recipe:

Ingredients:
  • 3 cups of chocolate chips of choice (I used semi-sweet chocolate chips)
  • 2 cups of freeze-dried fruits of choice (I used blueberries and strawberries)
Directions:
  1. Line a 9" x 13" baking sheet with parchment paper. Set aside.
  2. Microwave chocolate chips in a microwave-safe bowl for about five minutes on 50% power. Stir after 2 minutes, then again for every 30 seconds until completely melted.
  3. Spread chocolate mixture atop parchment paper until the sheet is completely covered in an even layer of melted chocolate.
  4. Generously sprinkle Honeyville freeze-dried fruits atop the chocolate mixture. Gently press down on fruits to secure into place.
  5. Refrigerate mixture for 2 hours or overnight before breaking into chunks and serving.
